Pyaaji: Onion Pakaudaa

Pyaaji is the name for Onion Pakaudaa/Pakora/Pakodaa, is a snacks that is served very hot as soon as its out of the pan. Pyaaji is a deep fried snack that can be served with puffed rice(Bhuja) or beaten rice(Chiura). It is well eaten and is very famous in the Terai region of Nepal.

Ingredients

Two large Red Onions

1/4 Teaspoon ground pepper

1/3 Teaspoon sea Salt

1/2 Teaspoon crushed corriander seeds

4 Tablesoon Besan(chickpeas flour)

1/2 cup of water

1/2 Litres of oil for frying

Directions

  1. Heat the frying pan at 150 degree celsius and pour the oil into the pan.
  2. While the oil is being heated, slice the onion in moon shape across the fibre. In a mixing bowl, add all the ingredients including the sliced onion and mix with water very well just enough to become sort of batter.
  3. Gently take handful of mixture and slowly fry in the oil by pushing it little by litte with the thumb towards the middle finger.
  4. Fry for one minute on one side and flip and fry for the next 1 minute or until golden brown the other side. Turn the stove off.
  5. On a bed of Bhuja or Chiuraa, sprinkle black salt, chopped raw onion, birds eye chilli and corriander leaves. Enjoy!!!
